PASTA PESTO DINNER

Click to order Pia's Parsley PestoOne, two, three and you have a wonderful dinner ready. This recipe makes your cooking fun, easy and tasty in the time it takes you to cook the pasta.

 

Ingredients:
Spaghetti or Penne, follow instructions on the package for size.
1 large potato per person.
Green string beans, at least 6 per person.
1 jar of Pia’s Parsley Pesto, at least 1 teaspoon per person.
Parmesan or like cheese after taste.

 

How to:
Put a large pot with water on the stove.

 

While the water is brought to a boiling point clean the potatoes and cut them in smaller squares. Clean the beans and cut them in half.

 

When the water is boiling add the pasta and stir the first couple of minutes of the cooking time with a fork to make sure the pasta does not stick. Cook the pasta the time written on the package.

Fill up a smaller pan with water, cook and add the cut potatoes. The potatoes should be finished a couple of minutes before the pasta. Add the string beans to the cooking potatoes the last two minutes.

 

Have a large bowl ready for the pasta pesto. Strain the pasta well, add it to the large bowl. Add the Parsley Pesto and turn, add the cooked potatoes and beans, turn again. Taste and add more Parsley Pesto and/or salt and pepper if you think this is necessary.

 

Top with grated parmesan cheese after taste.

CREAMY CARROT SOUP
An always popular family Soup

This soup is easy and fast, especially if you have a blender.
You need only what most families have in their fridge. With this you get a wonderful soup that most people will love.

Ingredients:
½ onion per person.
Carrots, at least two per person.
Potatoes, at least 1 per person.
Chicken base after taste.
Cream after taste.
Water, 1 ½ cup per person
Greens optional and after taste, can be some mixed greens or vegetables you have.
Extra virgin olive oil

How to:
Start cutting the onions and add them to a large pot with olive oil just covering the bottom. Cook lightly until clear and add the chicken base and water. Now add the cleaned and roughly cut carrots and potatoes. Add more water if necessary.
If you want other vegetables or greens in the soup add them at the end of the cooking time for the potatoes.

When the potatoes and carrots are cooked remove the pot from the stove and let it cool a little. Blend everything with a blender, add more chicken base, salt and pepper if necessary. Then add a little cream and heat up slowly. After a few minutes your family soup is ready.


Serve with some nice and fresh bread
